depending if you have other friends to play:

Duck Game (mainly a party game and fun with 4 people)
!00% Orange Juice (same as above)
Gauntlet (I think this game is kind of tough though)

2p
Battleblock Theater
Double Dragon Neon
ibb & obb
Lara Croft and the Guardian of Light (didn't play it too much)
Shiftlings
Wyv and Keep: The Temple of the Lost Idol (if you really like puzzles. I hear online sometimes doesn't work but I generally didn't have problems with people)

Counter Strike 1.6, empty knife server with jump stats plugin (preferably your own server). Ah, I miss that....so much. Only if you both are into that kind of stuff.

let me look at my library ... so I played with my gf (she doesn't like shooter either)

BattleBlock Theater
Trine 2
Don't Starve Together
Keep Talking and Nobody explodes
Ibb&Obb
Portal 2
Magicka
Monaco: What's yours is mine (<- this one highly recommended - even just as two players a blast)

lately we've been playing mostly Tabletop Simulator and Card Hunter during the wait for new co-op games
we can enoy together

tried to introduce her to Dungeon Defender 2 too but she did not like the looks of it, but could possibly be a fun game as a couple

Me and Jaye have had a blast playing...

100% OJ
Grim Dawn
Plague Inc
Call of Duty

Off top of my head, these were great multiplayer games were we skyped. We skype playing single player games too, depends what the game is but things like Binding of Isaac are good singleplayer skype games as they're easy to play quickly whilst easily quickly dropped.

Orc must die 2
Town of Salem
ARK : Survival Evolved
Elder Scroll online
Payday series
Borderland series

I didn't like shooters only because i didn't play them but over the years my husband keep insisting i give it a try and honestly now i enjoy shooters almost as much as other genres since i'm decent at them now which makes it alot more enjoyable. So don't give up trying to get her to try them out & good luck.

They were already mentioned, but I recommend Ibb&Obb and Orcs Must Die 2 my girl loves especially the latter ;>... there's also "Lovers in a Dangerous Spacetime", Shiftlings, Trine and a lot of RPGs like Torchlight 2, Grim Dawn, Titan Quest etc.

Depends on what she likes...
