I bought it in summer because I heard many good reviews for it. But I would disagree. The game itself is simple. Do some quests. Gather some resources. Finish the game. Of course, there are a lot of side missions and resource gathering (which gets kinda boring after a while). Yet you still want to complete your hideout with everything you can. And there are places to explore and things to see. But the game limits you. And I would say it's fairly easy when you get a car and a decent weapon. I haven't tried out the DLCs but it would seem like they add extra challange and in-game unlockables.
By the way, it sucks that you can't make your hideout in theme park.

I have been playing Kingdoms of Amalur: Reckoning. It's a similiar game to skyrim. Most of the Amalur players say that Skyrim is only better because of mods. In other aspects Amalur wins. I really like the fantasy setting in Amalur. It contains more lore for it's world and it's more colorful than Skyrim - I like it more for that.

How far have you got into it? I played the game, and in the early portions, it was actually really good. It played nice, it looked nice, it sounded nice. The problem with it though is that once you've done with ~2 areas after leaving the tutorial area, you've pretty much seen all the game has to offer. Sure, later on you'll visit regions that look different, but it all plays almost exactly the same way. Had they spent some more time & resources on making the gameplay more varied, and instead made the game a bit smaller, it would have been a real winner, but as it stands, it's just not that good. I think I got my moneys worth out of it, but if the choice is between unmodded Skyrim or Amalur, I would pick Skyrim, due to the fact that it offers a lot more variety.

I found it to be stupidly easy ... I turned the difficulty up as high as possible and still never had to worry about my health bar.

If you're looking for a great single player experience I recommend Dragon Age: Inquisition. While it isn't technically "Open World", it is Muli-region and very expansive. It's huge. Great RPG elements with a fantastic storyline. I've been completely obsessed with it since launch.
