It's funny you mention this. At my workplace, a guy literally brought in three mice with numbers written on their back with a highlighter, 2, 4 and 6. It was his attempt at getting us to close for the day. Instead, security footage saw him release the mice. He was terminated.

Jokes on him, right?

I use to own mice... bastards would always escape...

Im all for some small time office pranks, but once you involve animals, its game over man. There is no telling what kind of havoc that can cause, not just with other people, but with the entire work place. But im going off on a tangent, so I digress.

He was terminated? Dude, I wanna work for Skynet too! Where do I sign up?
(Mice can chew trough cables and damage equipment. If someone send lose some mice near my computer I'd "terminate" them too so that's completely reasonable. And rather stupid of the guys who did it.)

There are so many reasons why it just wasn't cool.
To your point, mice can chew through electronic cables. But to further complicate things, they can find a nice human-unreachable spot (Say within a wall) and reproduce, creating more of a pest problem.
Then of course employee morale, with mice running around you've got scared employees on their chairs and desks (Pussies). Not to mention the greater problem of being flea carriers which will spread those suckers in a carpeted office environment like no tomorrow.

In conclusion, don't be a moron and try this at work. Ever. Well, unless you work in a pet store. Then whatever, haha.
