Bacon biscuits.

Put bacon on a cookie tray and bake at 375F until crispy.

Eat some bacon. Leave some for the biscuits. Chop it up into little bits.
Pour the bacon fat out of the pan and toss it in the freezer to cool.

2 cups of flour.

1 tsp salt.

4 tsp baking powder.

1/2 cup of lard, or a combination of lard and the bacon fat equal to 1/2 cup.

Mix well.

Add about 1 1/3 cups of water, milk, or almond milk. I find the almond milk gives it the best crispy outer texture.

Mix bacon into the dough.

Add 1/3 cup of grated cheddar cheese to the mixture.

Spoon into muffin tins, and bake at 425F for 20 minutes.

Ha! That's why I started baking bacon in the oven! And it turned out that it gave me a more consistent overall cook. Though do it side by side rather than with the weave or you get a checkerboard of raw meat.
