It's not being made only in my town, but it's "the thing" here with similarly prepared freshwater fish stew - very spicy bean soup made outside in a metal pot hanging of tripod over open fire. There's even a festival each summer where people make it in the middle of the town.

As for state/region, it's more about the barbecue (using wood and coals), more specifically pljeskvica (it's a burger, but freshly made not industrial type, ranging from 200g of meat with variety of salads and dressings (you chose what they put in, can ask for everything but it's considered rude, 2-3 is optimal) to smaller variants of 150g or 100g - considered for kids) and spit roast, mostly piglets and lambs.

We (sadly) don't have any similar festivals here. Well none that I'd be aware of AND appreciate them. ;)
The only specific local food I'd consider noteworthy is this beauty.

Not my hometown though it was my adopted one for several years after college. I really miss this festival:Milwaukee Brewfest-A craft beer festival in Milwaukee, Wisconsin Amazing beer, food, and polka bands, what more does one need?

Region I currently live in don't have any regional specialties. We have some products that are regional - like we have biggest plantations of strawberries and asparagus in the country, but sadly they do not influence regional cuisine at all and 99% of them are just exported. When I moved in here 11 years ago there was very popular street food that was local and existed only here called "Knysza" (first image) but since then it died out replaced by Kebab restaurants. Knysza was a giant bun, toasted and cut to make a pocket and this pocket was filled oput with various fresh salads, roasted meat, cheese, extras like tomatoes, cucumbers, onions etc and drained with shitload of sauce. It may not look prettiest, was surely not healthy, but it was very big, extremelly cheap and you could fill up your belly for half a day for a cost of 1 beer in a pub ;p When I moved in you could buy Knysza on every corner, nowadays I haven't seen it anywhere for several years. So as I cannot think about any other dish that is local to place I currently live in I will post something very local for a place I was born in and lived my whole youth in :> It's called "Zalewajka Łódzka" (image 2). It's a variation of sour soup, made based on sourdough, smoked bacon, garlic and onions with addition of potatoes (which are boiled in the soup so they taste differently than boiled in water) and wild mushrooms.

Sardines, you know, those oily fish. They are cooked using a cane (called espeto) and coarse salt, grilled over wood fire on the beach (the canes are stuck into the sand). Tourists love them, so beach restaurants (called chiringuitos) can sell those espetos wtih just 4 or 5 sardines at a high price. Silly tourists. Beach restaurant association used to promote this product by setting a day during the summer in which they give away espetos for free, but due to the large queues it was not worth at all (when people see the word "free" they become a flock). Lately I haven't heard of this event anymore.
