Hidden Object & Match 3 games are what my mom learned to love (with crrrazy hours on some of Β΄em)!
Hidden Folks
Bejeweled 3
These games areΒ΄nt multiplayer, but work very well as "shared experience", like doing crosswords together :-)

Ibb & Obb is my go-to for local coop experiences that can be casual and puzzly without needing to be good gamers.
Lovers in a Dangerous Spacetime is also a fun experience, but it needs getting used to if she's not a gamer.
Overcooked, Tricky Towers LEGO games, as mentioned by other people, are also great games.
I play some Jackbox Party games with my family, and they can be played even if not everyone is physically together, by using the Discord or Twiitch streams.
I'm alone at home, but by brother streams it and we play with my parents and my grandma, makes for a fun experience.
Maybe that Tabletop Simulator could also have nice games, I haven't yet played it.

Jackbox party games but they are quite expensive and it's not worth buying them.

Ticket to Ride - First Journey is a kid-friendly version of the game.
Here's an excerpt of what I wrote as a playing report after playing it for Playing Appreciated:
"Having played a lot of Ticket to Ride (original board game), I can see how they simplified this version.
I believe that to introduce the game to someone with little board game experience, this can be a great game.
It was aimed at kids and therefore has a lot of animations that take time and this lessens the experience of other players.
The original game would give points according the the lengths of the routes, so a 1-train route would give 1 point, 2-point would give 2, 3 would give 4, 4 give 7, 5 give 10. Also there would be a 20-point bonus to the player with the longest continuous track system. This would incentivize players to try longer routes.
But in this game, all the long routes are along the borders, while the continental routes are mostly 1- or 2-train long, and there is no incentive for long routes.
So the strategy in this one is simply to gain monopoly on the central routes before the others can block them, and then you have a network that can touch almost any destination without effort. It strongly reduces the strategy aspect of the game and if two or three players decide to go for this optimal strategy, then the game ends on a dice roll.
Visually, the game is quite pleasing, but it feels cluttered by useless details. It feels like there are so many information being thrown at our face, while there is actually very little to know.
So all-in-all, I think this game lost what the essence of Ticket to Ride is, but I still think it can make for a pleasurable and simpler experience for younger players."

Heave Ho is a pretty funny and casual couch co-op game: https://store.steampowered.com/app/905340/Heave_Ho/
Also, it may be a bit too complicated for your mom, but my brother and I LOVE Rock of Ages 2: https://store.steampowered.com/app/434460/Rock_of_Ages_2_Bigger__Boulder/
It's split screen couch co-op with controller support.

Try "Co-Op" by MoaCube http://moacube.com/games/co-op/
It's not exactly for long-term playing though, but I enjoy playing it with a friend once in a while.

Party Golf is a pretty fun little game!
Golf With Your Friends is also super fun!

Maybe already suggested, but Tabletop Simulator has hundreds if not thousands of board games (thanks to the steam workshop). I believe it has a 'hot seat' option where you can have multiple people playing on the same computer for turn based games (like chess, for instance).
It has everything from chess to DnD, so if you want you could browse the workshop and see some of the games to see if anything interests your fancy. Pre-loaded it comes with a bunch of stuff though too. I can't recall all the 'pre-loaded' ones off the top of my head, but chess and checkers are there.
