I have an giveaway where the winner has not claimed (or "left feedback", not sure how it works for winners, as I haven't won anything here yet). The winner was last online 9 hours ago (as of this post), and the key was sent 6 days ago.

I did not see any way to send the winner a message on this site, tho it does expose their email address to me on the winning page. Do I email them and give them more grace or just click "Request new winner"?

Did the winner reveal the key ("eye icon")?

Try to contact the winner on Steam, comment in one of his/her old giveaways or send them a E-Mail. If there is no reaction you can request a new winner after 1 week.

Edit: I would only request a new winner if the original winner did not reveal the key.

No. I see the green eye icon on the completed giveaways, but not the giveaway in question. They do not have any prior giveaways to comment on. I could try to contact them via Steam or email, Steam would require adding as a friend tho, that's sketch. I suppose I will email them and wait a few more days.

Leave a comment on their steam profile page, if you can. If they don't claim within 7 days you can ask for a re-roll.
FAQ entry:

What should I do if the winner of my giveaway has not redeemed their gift, and I'm unable to get into contact with them?

If you contacted the winner of your giveaway on email and Steam over one week ago and they have not yet responded or redeemed any keys or gifts you attempted to send, please contact support to request a new winner. When creating a ticket, we ask you to include data that suggests you made an adequate attempt to contact the winner, such as screenshots of emails, friend requests, or gifts pending on Steam. If the request is approved, a new winner will be generated by the site.

I wish there was some kind of in-site messaging system that doesn't involve the gift-gifter exposing their personal contact information to winners in this situation, though I did email them.

Fair, but usually to message someone you have to add them as a friend, which opens all of the friend-only profile data. Still wouldn't hurt to have an in-site messaging system, so that when I send a message, it:is guaranteed to get through if the user is interested in steamgifts alerts.

My email to the winner may have just ended up in their spam box, as they have no reason to whitelist me, and probably flagged every spam filter keyword (giveaway, winner, won, claim, website name)... lol.

Another thought is that the site could also send a daily reminder to the winner, doing the reachout for you, then notifying you via the winner panel that they haven't responded in 7 days.

If the admins are worried about abuse of an in-site messaging system, restrict it to communication between giveaway runners and their winners only.

Firstly, they are allowed 7 full days to use the key so give them that time first. Secondly, after 7 days, leave a comment on one of their old giveaways (this one tends to work best if they are active on SG) or leave a message on their steam wall or email them and give them a day to respond. If they still don't, reroll the giveaway and link in the ticket a picture of you attempting to contact them. Once one of the mods or support see this and the evidence you enclose, they will usually allow a reroll. Hopefully, the message you leave will make them respond to you and they will actually deal with it.

Is reroll granted 7 days after end of giveaway or 7 days after you actually sent an email/wrote on old giveaway/messaged on Steam?

The reroll can be granted 7 days after the giveaway ends. As Steve mentions above we do want you to attempt to contact the GA creator before we reroll to hopefully have it result in a good outcome instead of a reroll to a new winner.
