Yup, Japanese. I've tried beef tongue from a Mexican place too. I have to say that the Japanese place was far superior.

The picture was from 3 years ago, so I don't remember that particular one too well. The last time from the Mexican place, though - the texture was kind of like eating a mix between fat and cartilage. The taste is pretty much just beef.

You should. You'd be surprised. It's deliciously beefy and when done right, it's one of the most tender pieces of meat you'll get. And yeah on average, about 5 pounds/ 2.5 kgs.

It's difficult to find extremely fresh and quality beef here for cheap since my country can only import them.
Maybe that's why I've never seen one before?
Will have to look seriously into finding a nice place for this :')

Sadly even in beef producing countries, good beef meat is becoming rare. And yeah it's not easy to find because
a) only one per beef lol
b) it's rather cheap and intensely flavored so a lot of them go to food processing for frozen/prepared meals like lasagna, or sausage (chances are you had it before without knowing it ;) )
c) most people wouldn't know how to cook it right

The most of them are perfect to cuddle :o). Very peacefull and curious animals.
Its a shame that so much get harmed (= horns cut off and burn the beginning of the horns out that they can't grow again) only that they are easier handled from humans (or more exactly easier exploited)

In Germany you have smaller cows. The smallest ones in the Blackforest (i live very near to it and know them very well from the reallife)
https://www.slowfood.de/biokulturelle_vielfalt/die_arche_passagiere/hinterwaelder_rind/ (The smallest in middle europe, 380-480kg, it give not more much of them :o(, most of them are in a radius of 20 miles, so don't a wide spreading and don't known from much people, very good meat)

Both are much better for hills/mountains, they have not so much weight and don't destroy the ground (other cows do that -with many negative effects from it-)
