We usually either make enough for 1 meal, make enough for multiple meals to freeze in (but that doesn't count as leftovers) or make a bit to much but not enough to eat from it again.

ah, I see. :) We tried that for a bit, but anymore it is just quicker for us to make 2-3 days worth and reheat it.

Yes, with some meals it's more worth it to make a big amount (like when boyfriend makes chili or whatever) but with most stuff we rather make it per 1 meal and that's it. Guess it mostly depends on what kind of meals you make and whatever.

Cucumbers and corn on the cob. I love 'em!:)

Well, I guess those aren't leftovers....so macaroni salad is high on the list of tasty leftovers!

I looove a good tofu banh mi. Also really fond of mushroom millet soup, which is quick and delicious even if it doesn't look impressive.

Banh mi's a type of Vietnamese sandwich. Basically pickled vegetables, aioli, tons of fresh herbs, and then the protein of your choice. I highly recommend trying one at some point if you can!

Never really ate leftovers, Idk it's because the taste just isn't there, and if you heat it it kills a lot of it even further.
