Does anybody know what "GDC Relief Bundle Key Only." means on some titles? At first, I thought it meant Steam keys (it doesn't). Then I thought it meant the game was newly released, and featured only in this bundle. That doesn't seem to pan out either.

I don't know about newly released, but maybe unavailable for now unless you buy the bundle.
Everyone that I'd checked out looking for a pattern showed doesn't list any means to buy or download if you were just visiting the game's store page seperately.
It's only when you've purchased that bundle that the message "you've paid X and download here" shows up.

It does seem that the devs are making these specific games exclusive to the bundle, for now at least.
I mentioned "newly released" because a bunch of them showed a release date of 1 day ago.

Unblock Gridlock was not included initially; Steam keys seem to NOT have been allocated also for purchases made before it was added to the bundle
Bought the bundle after the 10$ rule but before Unblock Gridlock was added, could claim my Steam key today. So this seems to have changed (need more proof than just me).

The bundle now has 174 items, and "up to" 12 Steam keys. Earlier today it had up to 13 Steam keys.
They also made a separate $10 tier with 5 games.

We were shocked by the unprecedented amount of donors and that number is still rising; we're working to refill our steam key stock for you all so keep checking in the next few days to claim yours.
However, right now we reloaded a small amount of 500 steam keys so try to claim yours now, but if you miss your chance today you can still check back in a few days and there should be plenty for everyone(the faster you redeem this batch the faster Steam will send us more to pass on to you)!

for "Long gone days" i only can download on windows or apple(?) and no steam
for "stellar commanders" nothing opens at all - as i didnt even purchased it via that bundle!
for Airheart" - the same, its not showing in the "bundle" list.
for "cateral damage" the same like Long gone days, no option to click "steam key"
for "a nightmares trip" the same like Cat.....
so no steam keys?

It's probably a licensing issue. If a game gets removed from the store, sometimes developers will revoke unused keys, itch.io has no control over that. Sometimes you can e-mail a dev, and they'll send you a key to replace the one revoked, but don't hold your breath.
