The main difference is in most of those dishes you linked, you get to control how much cheese you want per carb. I don't mind eating a lot of cheese, but it needs to be properly balanced!

Exactly. Plus they taste good. The kind of "mozzarella" that ends up in any dish with that much cheese is definitely not the good kind.
