This is why it gives you the confirmation page when creating giveaways. Always double check everything, and make absolutely sure you selected the correct game from the drop down list.

In cases like this where the accident results in the winner getting more than the giveaway was for you usually don't see any complaints, but if it were to go the other way (accidentally create a giveaway for something with a HIGHER value that what you're actually giving) you can get yourself into some trouble.

You can delete your giveaways, as long as you don't do it too often.

Not if you leave it until they've ended though, obviously...
