I'll just assume you mean Spike. I just got confused by the fact that he's technically never refered to as Cowboy Bebop in the show. He's the space cowboy ;)

The characters I imagined for stories I wrote and didn't write are naturally my favourites. Not very useful as references, because nobody knows them.
Other than this, I rarely have favourites, in large part because I tend to forget them. I'm currently listening to The Dispossessed by Ursula Le Guin, and I like Shevek. I previously listened to The Warrior's Apprentice by Lois McMaster Bujold, and I liked Miles Vorkosigan. (I also liked his parents in the books about them.) I don't know if I have any favourite, but I know I'm planning to listen to more Miles Vorkosigan stories.

Madoc from James A. Owen's Chronicles of the Imaginarium Geographica books definitely has my favorite redemption arc, so he's one of my recent favorites. I also like Coal from the later books in the series.

Not really my answer, but Connor in Detroit Become Human? Nearly made me enjoy the game on his own. Which makes him sorta worthy of it, since every other character I like usually comes from something I also like.
But uh, yeah, I really like Bakugou from BNHA, whoops. I just love that they made him have such an over-the-top bullshit personality and still take him seriously :P
