Not really all that chemistry-related, but maybe the games from Alice & Smith might interest you, or, for some easier pastime, maybe try something like Big Pharma, the classic Factorio or go all-out Steam EA crazy with The Chemist.

I didn't get hooked on Big Pharma but I can't really explain why. Might as well give it another try and Factorio a first one.
I'm also interested in those Alice & Smith games, mind you, but they are of a fairly different nature, aren't they?

If you're going to play Factorio, then after you learn how to play the game effectively, consider using Bob's or Angel's Mods for the game (or both). They both overhaul the game by a large margin. Bob's adds a lot of new metals and new chemical components and recipes, while Angel's make the game significantly more difficult by requiring you to process mined ore in a realistic fashion (crushing, sorting, using catalysts) and completely change all oil-related recipes by adding a lot of new products and steps.
They both make the game much more comlex even to a competent Factorio player, but if you're interested in the chemical/mining aspect then you could definitely enjoy it (as long as you enjoy the core Factorio gameplay).

I recommend you X3 Terran Conflict if you want to master space mining. You can try the newest X4 foundations but I haven't played it so cannot personally recommend.
A game that blends all those aspects would be minecraft with the minechem and Galacticraft mods. But that depends if you like minecraft at all.

Endless Space and Stellaris probbaly aren't what your looking for, but are worth a look. Factorio is (in)famous for hooking you in. Offworld trading company and Surviving Mars could be worth looking in to, too. The rest of Zachtronics's games might not be about space or chemistry, but are also good games.
