Subnautica is underwater/space and singleplayer with adventure and exploration.
Subnautica and SOMA are the only thing underwater coming to mind right now ^^ I don't really like underwater games/movies...

Finished the series 2weeks ago, it was amazing!
I haven't played many games with an underwater theme, but for a space game, I really recommend FTL.
There is a game thats close to what you want, that no one have talk yet: Hydrophobia: Prophecy. It's an awesome game, but it dosn't perfectly fit the underwater theme: You want to stay above the water. I loved this game, take a look at it!.
