Games with good gore effects?

From the games you have... Bulletstorm.
Also Borderlands 2 if you have a good enough video card to crank up all the graphics including PhysX (Blood and acid physics! :D ) to max.
You've already played Mortal Kombat and The Darkness 2 so I guess I don't need to mention those.

Second the soldier of fortune suggestion. Nothing was as brilliantly over the top and viscerally satisfying as that game, even though it is quite visually dated now...

To everything people have said so far I will just add AVP 2010. Gore is definitely it's best asset.

Bulletstorm is a game BUILT around brutal ways to execute people. And, BOY, is it fun. And The Darkness II actually has a move called "ass-acution". In case it's not self-explanatory enough for you, it's basically pulling some guy's spine through his ass. It really doesn't get much gorier than this. Oh yeah, Bioshock Infinite is pretty gory too, although it's not the main focus of the game and the biggest gore come from the melee executions which are neither mandatory, nor very efficient to use compared to simply shooting people or using plasmids. It's a game that really separates the normal people from the sick bastards as you pretty much have to be one to use those moves.

Good old Bioshock is as gory as ever.

I don't know about good gore but Jericho has gore everywhere =)

I don't know if it counts but RAGE has some great 'people exploding to pieces' effects.

Duke Nukem 3d was known for its blood stains on walls.
