Darker than black is a great (no echhi) anime about assassins. Black lagoon has it's moments (they aren't assassins but are the targets sometimes). I can list more if you are looking for the type I am referring. Good luck~

Noir, it's about an assassin girl, and some other people she meets due to different circumstances. It does have some fantasy elements, so if you're going for 100% authenticity, it might not be your style.
I think there's a couple of others, but they are fairly old. It haven't been a story that's really been popular lately.

It wasn't too bad, but the episodic nature and the almost complete lack of blood was too much of a sore point for me. The serious grit of mortality and taking lives really fades when even during a huge gunfight not a single drop of blood is seen. Finger-gun, BANG, clutch chest, flop over dead in true old-western style.
Shame really, the plot might have gone somewhere but I could just never force myself to finish the boxset.

Well I suppose I bought the boxset, I might as well dig it up and have a look sometime.
At least, whenever I get over my Space Engineers addiction, get bored of Strike Vector, clean up some multiplay on Final Exam, catch up with my online course, tweak my town in Banished, use my daily energy allowance on Dragon Coins, and watch Twin Peaks.
So yeah. Eventually! :D

You do have a point there, but the atmosphere and plotline more than made up for it in my opinion. Also, you gotta keep in mind that it's an old anime at this point, and back then you just didn't find anime with super-gore like you do nowadays. Anime have moved quite a bit since then. Of course not every anime is for everyone, and if you really can't stommach it, then that's fine as well. Just throwing in my 50 cents, in case OP might give it a try =P

Black Cat is a good anime about assassins. It might not be entirely all serious with the assassins, but it is enjoyable.

"Gunslinger Girl"
An organisation that trains and creates assassins out of young children. The entry exam is surviving a number of transplants that increase their physical abilities so they can operate on the level of a grown adult. They get paired up with a 'handler' that keeps them in line, pointed in the right direction, and up to date on objectives and intel. Sounds like rampant mindless action, but this anime actually factors in the fact that yes, they really are just children, and therefore emotionally and mentally prone to weakness or breakage no matter the training given. The anime focuses on a branch with just little girls (anime, go figure!).

But they aren't assassins. They are assault-squads, for extremely dangerous missions. Hardly the "sneak about and kill people off with cunning and skill" type i'm assuming the OP wanted.
If Gunslinger Girl counts as assassin anime, then so does Jormungard. (hue mercenaries)

They are secretive, low-profile and not part of public knowledge. They only do outright assaults as desperate last-ditch manuevers. Being an assassin doesn't mean you're a gun-ninja. Then again it has been quite a while since I watched it and my memory is blurry, but there was a heavy focus on careful intel gathering, approaching with maximum, organised, synchronised efficiency, and leaving as little trace as possible when hitting a target. The big action sequences were often the result of a hit gone wrong.

I'll complete Phantom: Requiem for the Phantom with the Phantom: The Animation (3 OVA).
I'll add Golgo 13 movies and series.
But in my book the best are: Gunslinger Girls series (2 tv series and couple of OVA's), Noir and Requiem for The Phantom. Those are without doubt the best.
And if you did not see Black Lagoon, go for it. Might not fit the profile completely, but it's a great anime series. Jormugand and Psycho Pass are in the same boat, but still deserve a look.
P.S.: if you go for Noir, you can also add Madlax and El Cazador del Bruja. Those three are the "Chicks with guns" series from Bee Train. Those last two might not fit the profile, but definitely are good/great anime series.
