One or multiple GAs?

Doesn't really matter, except if you want to create different types of giveaways for each key (group only/invite only/public etc). The other difference is, it would cost more points to enter if you separate them in different giveaways, so it's your call on that.

To be perfectly honest:
For baaaaaad games, make one GA with multiple copies. Bots will join,people who don't take their wins seriously will join, and the few real person who is really interested will have an easier time (though - many entrants).
For better games, make multiple giveaways. Whoever really wants them, will join them all.

edit: better games as the one you personally feel they are worth something. Favourites, community wishlist toppers, games you want to see played.

I'd say one GA with multiple copies, the only difference is more points needed and more clutter. But you're free to do something like separating GAs by levels, or something, it's not a bad idea

If you need to reroll, you want one key per gib.

if you would delete giveaway for one key, it is harder to delete one key from multi copy giveaway than delete single copy giveaway

I like multiple giveaways because it costs more points for people to enter. This makes people able to enter for less giveaways which means they will hopefully only enter for games they really want and not just for the +1 or to idle for cards.
