What to choose for giveaways restricted to multiple regions?

I am trying to make a GA for Skyrim LE bought from Bundle Stars: https://www.bundlestars.com/en/star-deal

However, it has some region restrictions:

This Product will NOT activate in the following regions:
Poland, Russian Federation, Australia.

Since I can't seem to pick multiple regions, I'm just going to pick the newly added NA region :P

Is there a better way out or am I missing something?

EDIT: Will I be able to view my giveaway if it is for a region I'm not in?

Don't choose region restrictions on that one (unless you intentionally want to restrict the giveaway to only the region you selected). The key will work worldwide including the three countries, regardless of what Bundle Stars says.

There is NO restriction on where you cannot activate the key.

EDIT: Will I be able to view my giveaway if it is for a region I'm not in?

Yes, you are always able to view your own giveaways regardless of what restrictions you put (group, region, etc).

They are just well known for giving wrong region lock information (same goes for many other retail sites). As long as you know the subid you can simply check with SteamDB and that's the most accurate.
