Scenario: I see a featured game at the top. Just a few seconds left. I open it. I check the Steam page. I have it marked as Not Interested. By the time I get back to the main page, the GA has ended. So, the little eye icon to add a block filter for the game is no longer available. I search for the game title, but no other GAs for the game are open.

Question: How can I manually add the game to https://www.steamgifts.com/account/settings/giveaways/filters?

You could do as ambidot stated, however wouldn't an easier solution to be to just click the steam icon that links to the store page (and opens in a new tab)? Then we you see it is something you don't want, you hide it.

If you think you may want to enter, open the GA in a new tab but leave the original page alone so you can always go back to it.

The eyeball shaped block-game icon only appears on the main page. It does not appear on the page of each GA. And it disappears along with the GA listing, once time runs out. In the scenario described in the GA, when I then search for another GA with the same name, I find none. Hence, no eyeball link.

yes, so open those links in new tabs so the page with the GAs listed stays available to you

OK, I understand you. And that's what I always used to do. Nowadays, using Extended Steam Gifts, the filters I have applied on the main page make this impossible. For example, I have a filter set to only show GA's that costs 0-7 points to enter, I see the featured game (which still shows despite the point filter), and when I increase the range of the filter to see the eyeball, the page refreshes.

This is not a critical issue. Just a little irk that that I'd like to fix if possible. Thanks for the suggestions. I have messaged the creator of ESG on Steam.
