If streams are more your thing maybe try CyberLiquid. It's a smaller channel so you won't get buried under 50 messages a second where you just become 'Chat'. Lot of single player games like RE7 & 8, Nier, The Last of Us with some Apex Legends to round things out. They stream around 7pm CEST and are currently playing Days Gone. I'm a huge YouTube watcher, I've actually set up different channels to manage the hundreds of subscriptions I have into different categories - there's notably lots of stuff about astronomy, video games, cinema, geopolitics among others, but I don't like to recommend out of the blue, so maybe tell me if there's one theme you'd be more into ?
My most watched content tho is definitely history, on this topic alone I think I'm subbed to over 50 channels. Again, there's stuff for every taste and time period, but if I were to recommend one it would be World War Two : https://www.youtube.com/channel/UCP1AejCL4DA7jYkZAELRhHQ they follow the War week by week in real-time as it unfolded (with a 79-year difference, so currently in 1942) with many subseries and specials (most notably War Against Humanity which is followed in parallel to the regular episodes and some of the most powerful videos I've ever watched). It's a direct successor the the original channel of The Great War : https://www.youtube.com/channel/UCUcyEsEjhPEDf69RRVhRh4A which from 2014 to 2018 had done a similar thing following World War One weekly in real time from 100 years ago - the channel has since kept going and is covering the interwar years periodically with a similar real-time focus. It's stellar content, not only well-researched, produced and presented, but in a unique format that couldn't exist anywhere else, so I you have even a passing interest in history I can only recommend it !
On Twitch, I pretty much only watch Starcraft 2 competitions, it's my favourite e-sport :)
