Hmm.. Unfortunately looks pretty expensive. My problem is that I have most of this but still tempted by some I have not and especially Dune: Imperium (and some dlcs are also nice). Also T3 does not make sense in my opinion, as it is low price difference between T3 and T4 :).
Anyway will about this one for GAs and some which I like :). But still need to check it in more detail.

I dunno where that tag comes from because anyone playing Everdell "optimally" will leave anyone playing "casually" in the dust with no hope of catching up as soon as the first turn is over. The core mechanics are actually pretty complex and a lot of casual players would probably not find the game very fun despite the cute little animals on the cards :x

I play Root a lot (at 673 hours atm) and it is well done and well worth picking up. Might have trouble getting a live game going if you are just going with public lobbies, but there is a discord that is supposed to be good at getting games going. I always play async so I've never bothered joining, but public async has the issue of new players not knowing what async means and then leaving -.-.

Of the three I know:
Sagrada is easy to start, and it has a set of single-player puzzles that you can use to learn how to play the game well.
I still haven't finished the tutorial for Wingspan.
I know Munchkin is an easy card game to get into but I've never played the digital version.

Yes, just play the singleplayer until you understand the rules. I have never played any of the physical board games, but I do play them on Steam from time to time.

Root is the only one I play and it takes a bit to get the hang of it. There is a single win condition, but each character plays differently which determines how you get there. There are some offline challenges that you can play, as well as playing with bots at various difficulties, to get you head around it.

Root is quite complex but have big tutorials to make more understandable
Scythe: Digital Edition: don t know
Sagrada: is perfect for starters and for casual relax game (both vers)
Wingspan: don t know
Munchkin Digital: is good for card battle game (played physical ver)
Terraforming Mars: can be look complex but is not hard to understand (played physical ver)
Everdell: easy for learn hard to maser (played physical ver)
Dune: Imperium: don t know
Quilts and Cats of Calico: PERFECT for learn rules of Calico, after that PERFECT relaxing casual logical game (both vers) My GF love it!
