It is strawberry season here, so I bought some yesterday. And as I really love strawberries, I wanted to share my joy with you <3

Genki's Low-fat Trifle

  • 1 pre-made Angel Food cake
  • Fresh or frozen berries of your choice (I like to use fresh strawberries, hulled and cut into quarters)
  • 2 to 3 boxes vanilla instant pudding (and the milk to make it with. Using skim milk will reduce the fat content even more)
  • 1 small tub whipped cream
  • 1 Trifle bowl or large mixing bowl (a trifle bowl is a large glass bowl on a pedestal, with the sides of the bowl nearly vertical)

With a large, sharp knife, gently cut Angel Food cake horizontally into 4 equal parts. Each piece will look like a large donut. Place one piece of cake in the trifle bowl. These pieces will barely fit in a trifle bowl, but squishing in the sides the tiny bit you need is no problem.The 4th piece of cake will be used to fill in the holes for the other 3 layers, so break into 3 equal pieces, and use one piece to fill in the first hole (did that make sense? hehe).

Next, layer in berries of your choice (sure, add some of the juice! The more that soaks into the Angel Food cake, the better!).

Prepare pudding per box instructions, but use 1/4 cup less milk (or 1/2 cup if you're using skim) than it calls for. Pour 1/3 of the pudding evenly over the berries, then repeat layers (be sure to use berries on all 3 layers ).

When you get to the last layer, cover the entire dessert with a thick layer of whipped cream.

Chill for at least 2 hours, then serve in bowls. This dessert tastes even better the next day, as it allows for all of the flavors to meldwonderfully.

lol, I'm not sure how well I described how to make this. I've been making it for so many years that I guess I kind of take it for granted.

I've made this in many variations, including:

  • Blueberry-Strawberry
  • Peach-Strawberry
  • Blackberry-Raspberry-Marionberry
  • Blueberry-Peach
    and of course, my all-time favorite:
  • plain ol' Strawberry!

Have you had Japanese strawberries? They grow different cultivars (like for the US, Gala vs Fuji vs Red Delicious apples) and they taste so much better and are more fragrant.

I love strawberry pie. It's probably my favourite! <3.... but just strawberries with cream is super nice too... Oh... and strawberry & spinach salad ... ohhh... and fresh strawberry jam..!! Ok, ok, ok! I just love strawberries! <3 Thanks!

Only four people never had the chance to taste sweet strawberry love, 18 don't share our love, but the majority knows strawberry heaven.
