It doesn't matter if I'm sending keys or steam gifts. IMHO chat is the safest way to go. I add a note to my giveaways that the gift is sent via Steam chat to let people know.

Key : Email
Steamgift : chat (or at worst the "send gift" system)

I tend to do email as its far easier with a large batch of keys.

Chat, because I like being showered with gratitude.

OK, not so much, but chat gives you the opportunity to remind people to redeem the gift and mark it as such on the site. With mail you can put that in the message, but you never quite know when they're going to do it, which is annoying. I only use email when I'm doing something silly like give away 6 copies of a game, because it takes too long to get online time with 6 different people.

Usually email. Sometimes I send keys through chat when I'm not 100% sure that the key still works. This way I can solve possible problems with the key immediately.

Always email. I have too much friends on Steam already.

You can just remove them after chat, that shouldn't be an issue. Unless of course you're adding so much friends that even keeping track of the invites and removals is too much work. :-)

Yup, same here. I like to have a little conversation with the winner, even if it's only for a minute or two :)

I prefer steam chat when sending keys. This way I can get an response right away and I know they have gotten the key. I can also remind them right then and there to hit the received button.

I take screen captures of the chats for proof.

I started going with steam chat cause there was a couple of people who activated keys I sent them but never hit that they received them. There was also people who never activated the keys but never responded that they got them and it wasn't till like 2 weeks later they finally clicked received. So to take the worry off my end, I do it all in chat now. This way I know they received it.

Email, for sure. I can keep the email for my own records, should I ever need it, and I run email on my primary machine which is easy to see and always running, but Steam on my secondary, which makes the chance of missing it entirely much higher.

Keys: email
Gifts: Send to email address

Is all I've done so far.

For my own protection I've started putting $30.01 CV on non-bundle keys so that I'm sure the person knows how the site works etc. Bundled keys I'm happy to take a risk with so no CV.

Gifts, well I'm taking screenies of my inventory immediately after sending that show that I've sent it. The gift stays there until claimed and it shows the email addy of the person it was sent to. Hoping that's enough proof of sending if I ever needed it so I'll keep gift giveaways open to anyone, bundled game or not.

Still a noob so this policy is not exactly set in stone yet.

Chat, because it is followed by lots of "Thank you" and some really good conversations afterwards. At least I happened to find some really nice and intelligent people via steamgifts.

E-mail for keys.
Steam for gifts. With chat or without it if winner is not online.

Email sure is easier than trying to both be online at the same time, but I like the connection of chat.

I always send it by email. I just don't see the point of hoping me and the winner will be online at the same time so we can chat. Besides, it's not like I'm that hard up to get more Steamfriends.
