So what differentiate Metroidvania games than other platformers?

Basically yes, they generally involve the exploration of a map (instead of a sequence of levels), the progression of the character (with new moves and weapons gradually acquired) and other elements like shops, inventory management, etc.
Of course not all metroidvania have all the elements above.

Metroidvania is a term derived from concepts popularized with early Super Metroid and Castlevania games. Similar to the most recognizable element for roguelikes being the procedural gameplay, the most recognizable element for Metroidvanias is the ability to revisit previous content later on, to reveal new content.

It's worth noting that Wikipedia is a great resource for getting detailed information on most any gaming term you may be curious about.

Oddalus is certainly one of the more notable recent Metroidvanias available on Steam. Ori and The Blind Forest is perhaps the most recognizable one currently available (along with being one of the few recent single-player platformers that I've had personal interest in), so that may be another one that you've played [or could consider playing, if you haven't gotten the chance yet and are looking for a new Metroidvania to spend time on].

Much like Oddalus catering to Metroidvania retro-gaming, Dead Cells bills itself as sharing concepts with both roguelikes and Dark Souls, in addition to being a Metroidvania, and thus similarly caters to a more specific range of tastes than a game like Ori.
