If Ill buy it today (01/09/2018) what can I get?
Classic + Definitive version and can choose in menu some of them + paid DLC Sir Lora?

As news said that those who have DOS 2 (classic) before the update - get it for free. Im confused

You'll have both versions. It's not separate entries in your library like the previous game (though everyone got both anyway regardless of when they bought it), it's a big update for the game, you'll have both installed and choose which version you want to play when you start it.
Not sure about the DLC but according to SteamDB you'd get it if you buy it now : https://steamdb.info/sub/207600/apps/

I have DOS 1 (classic) and DOS 1 (enhanced) and waiting, that DOS 2 will be separated as previous.
But news with update and some special terms for those, who bought DOS 2 before update confused mе.

I also thought it would be separate but I guess this is better for players who wants to start the definitive edition but still have a save of the classic that they play, and for others it's "just" 8 extra GBs to install.
I'm really not sure about the DLC, maybe SteamDB isn't updated yet or they will remove it later today, but it looks like they want to sell it later since it has a price on Steam.

This wasn't always the case. When DE first released it was only certain batches of keys that included it. When I was looking at buying a copy myself the answers I got where that these included the initial print run of physical copies and any of the keys issued through Kickstarter.

Def. prefered the old system... it's 60GB now for both games, and no option to remove the Classic version.
