It's hard to say. The RPG label is a rather confusing mess since it was used on a lot of games where it shouldn't of and things started to merge. Way back in the day it was about stats, parties, quests, item drops, item management, leveling up and dialogue choice. Now in the modern gaming market RPG has been diluted into "RPG mechanics" and every modern game has to have some kind of token leveling up system.
On the topic of Zelda though I wouldn't honestly call it a RPG. The only thing that remotely matches RPG mechanics is gathering new weapons and items which can occasionally be leveled up. This is not something inherent to RPGs however as other genres has been doing this for years and RPGs usually have a wider selection of items with clear upgrades/downgrades spread over categories.
I would place Zelda in the very broad Action Adventure genre but I suppose it's need's it's own genre much like Metriodvania.
EDIT: I was talking about the 3D Zelda games. The old 2D ones have a much more RPG/Roguelike feel to them and are a little bit more focused on items and character development.

While it's mostly an adventure game, it can be considered an RPG title. There's character development along with quests to be done and stuff.

Zelda is an RPG what you are considering an RPG is what is known as a JRPG which would include such titles as final fantasy , dragon warrior, legend of dragoon ,etc and ive always been of the opinion that Every game ever made could be considered an RPG considering you play the Role of an avatar and not yourself therefore any game where you are not playing as yourself could be considered an RPG.

You'll have to go into more detail into what you're looking for in a game. There are many many sub-genres in the RPG genre as it was one of the first video game genres to develop. If we don't know the particular genre you enjoy or are looking for all we can do is state our favorite game where someone will reply "dat suks lol" and a flame war is created.

Witcher, Oblivion, Dark Messiah: Might and Magic (#1 on my buy-list), etc. Don't go for the new stuff like Skyrim, it's not the best.

After fps go for subgenres first, e.g. action/adventure/rpgs like Diablo 2, Darksiders, Dark Messiah of Might and Magic etc. If RPG --> Witcher or Gothic.
Also open world RPGS (Elder scrolls:Morrowind,Oblivion,Skyrim) may disappoint you if you like being guided/driven by the game.
