I completely agree with you. The entire Civ-series fits in here, including Alpha Centauri.
Another Civ-like worth checking out is Master of Magic
And speaking of Master of *, Master of Orion 1-2 are also excellent in this regard.

For me it's ME Trilogy, DA:0, evey-single-fuckin-game of The Elder Scrolls series (well, Redguard was not so good) and The Witcher series. And Fallouts.

This. These games are amazing in how changing up your character and their combat style can completely alter how the games feels and give you a new experience (within reason). I think the same can be said of any RPG which offers a fair bit of character customisation.
Also, Neverwinter Nights. It is still an amazing game. The amount of time I've sunk into it is crazy.

You can easily log 80+ hours into Dark Souls before you beat it the first time, then you can play New Game + and punish yourself even more!

Aha, it's true. So many different ways to play this game. After you finish the game, if you feel it's getting repetitive try a different style and it's a new game again. Flip around with a dex weapon, or have strength and use some enormous sword thing, be a sorcerer and shoot everything with magic, etc. Also you can challenge yourself, i.e. no shield, only use a bow, don't level up, etc. Then once you think you're starting to get the hang of things, try pvp and suddenly you're a complete beginner again. :)

I'd recommend sandboxes games like Terraria, Minecraft and Dont Starve. Terraria its the best replay game ever imo!
I don't know if this suit to the thread but I also recommend League of Legends and Dota 2.

I keep going back to Minecraft and Terraria. Lately I've been playing Terraria every chance I get.
I also logged a ton of hours into War of the Roses. It's all multiplayer and I haven't logged on in a while so I don't know if it's still being played, but it was really fun.

Actually I just checked my Steam library - I have logged the most hours into Borderlands 2, followed by Terraria. I'm sure I've logged more into Minecraft, too bad it doesn't track your time playing.

Call of Duty : Ghosts, so many choices and endings that influence the universe around you.
One time you may reload an entire magazine, other times you may fire 1 shot and reload and so on; each of these decisions ultimately decide your fate.

FTL, and any 4X game really(My personal favorite of the 4X genre being Sins of a Solar Empire, or Civ V). Open ended RPGs like the Elder Scrolls series, or Neverwinter Nights/Baulder's Gate/Planescape: Torment are also good for replayability if you're not into 4Xes. After that you're looking at sandbox games like Terraria, Space Engineers, Minecraft, Gray's Mod, etc. FPS games always come dead last in the replay stats, unless you like playing multiplayer with 12 year olds.
