A game that reacts to your actions in an interactive way? Can't think of any that does it properly. Some games, like Mass Effect or the ES series give you some static choices that may or may not have gameplay consequences but rarely work in an interactive way.
A truly interactive game? If you find one let me know, I'll play it.

I'd say XCOM:EU on ironman, makes you care about your squad and decisions, also the whole Mass Effect franchise.

Fable maybe? (although I've only really spent time playing the first). Also Mount & Blade games you can pretty much go from being a solo horse-rider to ruling over the entire region.
My faves are probably The Last Remnant, Dragon Age: Origins, GTA (any), Fallout (any), FTL, Dark Souls.

Dark Souls drives me away because of its reputation for being bloody hard. And for some reasons I always missed the sale on The Last Remnant!
I honestly didn't know how to do anything in Mount and Blade, had to look up a lot of things online. 'till this day I still have no idea how to become a lord or even own my castle.

Don't let reputation drive you away, just try it if you have the spare $$$. Sometimes the retail version goes on a decent sale (and can also be redeemed on Steam).
The Last Remnant has been cheap so many times, it will be mega-cheap again at Christmas or something. You get a loooooooooot of hours out of it if you can get used to its odd combat system.

What I'm afraid is that I might not be as into Fallout 3 as I was with Oblivion since Fallout 3 has possibility of driving me away like Skyrim. It's the dull and not so much alive scenery in Skyrim that made me so sick of it that I prefered being in dungeons instead of the outside world like in Oblivion. In your opinion, would I have a problem with the environment in Fallout 3?

nv was better, and I disliked owb :P all of the dlc really was a bit lackluster. they felt more like amature mods than dlc. their loot was unbalancing the stories were almost entirely unrelated/different from the base game and barely seemed to be in universe ect.

any good RPGs will do the trick, for me i'm being addicted to the original Fallout. If you want something in the vein of Oblivion, you may want to try Morrowind (the most obvious suggestion here), Two Worlds 2, the Gothic games and the staple RPGs franchise such as Might and Magic and Wizardry.

Title says it all. One good example is TES IV: Oblivion (which is >>> Skyrim, deal with it). When I was playing Oblivion, it was pure escapism and I feel like I was a part of the game. The best part was that I felt like my actions in the game actually affected people's daily life. For example, when I successfully exposed this merchant who sold stuffs that had been buried along with dead people, I received discounts in almost every shop in imperial city. Tbh, Oblivion is my favorite game of all time just because it made me actually want to sneak in a house and steal people's stuffs or made 2-3 different character or the complex character creation (I still prefer the protagonist to be focused on one job instead of being too versatile.)
Another example would be the Mass Effect franchise but the amount of content is certainly incomparable to Oblivion (I spent approx 50 hours for each ME game and 200-250 hours on the 360 for Oblivion...imagine how much more I would have spent if I had played on PC and had used tons of mods!)
So, do you have any immersive game that makes you totally forget reality?
