1) Kobalos. He wants the head, so "K". 2) "7". The Pleiades are also called Seven Stars. 3) "q" for qoppa. 4) Griffin. He wants the body, so use the center letter, "f". 5) Amon. He wants the tail, so "n". ~Amazing puzzle!

1: Kobalos, the trickster elves that stole from Herakles. Head is -> K
2: Pleiades, also called the 7 heavenly sisters -> 7
3: Hekatonkheires 3rd and 8th hand are k. The main hint is the letter koppa, the archaic Greek letter for /k/, which is the source of the letter -> q
4: The Griffin is called the king of creatures. The Body is ->f
5: Arion, the horse-son of Demeter and Poseidon, who also talks. It's tail is n.

(Hmm, good thing http://www.theoi.com/Georgikos/Kerkopes.html start with a K too. :-))

k -> q is more like a 180 degree rotation
7 eluded me, i was thinking it was a letter, but there's nothing to hint toward counting

Hear me mortals. I am Hermes and bear an important message from Zeus.
The Titans broke their eternal prison and roam the earth once more. The one of you most clever and tenacious shall be called Hero of the Gods and banish their foul spawn back where they belong. Great honor and treasure will be your reward.
Five quests you need to solve, to prove your worth. If more than one of you may survive those tasks Tyche will cast her die.
First, cut the head off the imprudent rogue who robbed the strongest hero and lived.(Boon:The thief you seek is neither god nor man but a race of little tricksters in itself.)
Next search for my mother and aunts among the countless stars. (Boon: Once you find my mother and her sisters, remember they are divine kin, thus different from all the other tasks. Do not take any parts of their bodies, nor speak their name. What remains is what you seek.)
Now find the hundred-armed giant and take his third and eighth hand. Turn them to 90 and bring it to me.
(Boon:Indeed for your sake the quests where given and the answers asked in English. Alas, this is not my ancestors tongue, and sometimes things may changed in translation. The 90 I seek in my own language is ϟ . Once correctly turned any hand ought to be right.)
Between heaven and earth find the king of creatures and bring me its body.
(Boon:The king of creatures you need to find is the mightiest no only of earth, but also of the sky. Bring me not just one of it's parts, but the body of the whole.)
Lastly race the god-sired horse, eternal, swift and gifted with tongue. Seize its tail.
There is no time to be lost, the situation is grave. Bring me your spoils ere five days have passed or your chance will be void.
