I've always wondered what the fish things were. I've been to Chinese restaurants where they're called Fried Crispy Silver Fish, and I get a mental picture of humongous silverfish wriggling in a vat of boiling oil

According to google. it's called 白飯魚 or white rice fish. It looks like whitebait though

Basically servers push around carts, each full of a certain dish like dumplings, sticky rice, spring rolls, etc. You can either accept a dish for your table or refuse it, mixing and matching. (Example pic.)

It's specifically something you have for breakfast or lunch usually, not dinner.

Abalone Siu Mai looks interesting, but my guess is that piece of abalone probably comes from a can.
