Edit: Journey to the Savage Planet has been suggested and I'd just like to say that the game is pretty high on the "there might be danger" scale compared to the others :D And can be pretty frustrating.

What most of these games have in common is exploration, crafting and adventure.So this list should be helpful.
You can modify it to suit your further preferences.

Elite Dangerous you can choose to play it completely offline, so no other players to disturb you and a little reminiscent of no man's sky
Dyson Sphere Program I don't know if they added enemies yet, but it's pretty chill, basically you gather resources to gather more resources
