I think they don't. Once when I looked into the GOG forums there was that thread about free Torchlight, and months later people were like "oh no I missed it :C" and some other users who still had copies from back then were still giving them away.

Some promotional codes on GOG do expire, generally after a year.
Can't say about those freebies they give out every once in a while, like that free Torchlight.
Late edit: just checked, both that Torchlight and this promo's free gifts are valid forevar.

This is your last chance to get the original Fallout games, DRM free. Bethesda won in court the publishing rights for the old Fallout games and asked GOG to remove the games from the shop. As a result we have this massive GA as a big FU for Bethesda. The old Fallout games might remain for sale on Steam, with the Steam activation, but won't remain available for sale on GOG ( DRM free ).
And no: the old games don't have achievements or cards:P
So get this chance to add to your collection a version that doesn't require an activation, serial number and such. Games bought ( gifted ) before rights reverting to Bethesda will remain in your account.

Awesome! I've never played any of the Fallout titles (well, except when a friend let me try a bit of New Vegas. It was fun, when crazy old men weren't shooting me just because I accidentally discharged my weapon outside his house :P), and I always keep missing them when they go on sale. I'm definitely gonna try and pick these up, when the servers are more stable.
EDIT: Wow, literally as soon as I created this post, GOG finally processed my order!

[SECOND EDIT] Another quote from zimmer550:
One more thing to know about the GOG versions: those versions are working fine on modern operating systems starting from win XP and ending with Win 8.1 ( original games were released for DOS/win95/win98 ). Steam version has some issues with the modern systems. So the GOG version is the ultimate version for the old Fallout games. Also do not forget to pick the
Fallout 2 Restoration Project 2.2 from NMA-Fallout- something to add after you play at least once vanilla Fo2.
