Shin Megami Tensei X Tekken, Atlus; I love you as a publisher, but give the PC market some love, dammit.
Killzone - Sony exclusive, but I think it would do well on the PC.
Infamous - I loved it when I played it at a friend's house. Didn't love it enough to make me buy a PS3.

Splatterhouse - It wasn't too well received but I thoroughly enjoyed it.

Gran Turismo 5. I would love to experience this game on a high end gaming rig, since it already looks incredible on a console.

Metal Gear Rising: Revengance

Heavy Rain, Ratchet & Clanks and maybe something else I can't think of now. Xbox doesn't really have any good exclusives (I find Halo mediocre etc).

Basically any Japanese developed game. When the big Japanese publishers contract a western studio to develop a game it usually makes its way to the PC. Some eastern developed games do make it to PC, but the majority of them don't. I don't know how big PC gaming is in the Asian countries besides the likes of StarCraft, but it seems to me that the eastern publishers either love consoles much more or PC gaming is not a big thing in their homeland. Though with the new consoles being on an x86 architecture I see no reason why a game can't be placed on PC now.

Only Red Dead Redemption.

Most of the PS3 exclusives sans the Uncharted series, which just don't appeal to me for whatever reason, and from the X360 only Shadow Complex and Lost Odyssey. The rest can rot on that console. Hell, I think the Wii had more exclusives than these two together that I'd love to buy/try.

EDIT - fuck me, I forgot Deadly Premonition. That would be my #1 choice.
