Yeah the spinach don't really look tasty at first sight, i can imagine the disgusted look of a kid who is served his plate of spinach. But pancake is a magic world, it changes all ! Here you've no more spinach, you've spinach pancake ! :D

if you don't like spinach, you never ate a well prepared spinach. it's delicious and IMO the nest leafy green! but if you don't treat it right it turns into a pile of green vomit and that's what puts a lot of people off. I have however managed to turn a couple of spinach haters into spinach lovers, so I guess it proofs that it's great if prepared correctly!

It's a recipe but i use a can of chopped spinach, because it's cheap and convenient. (It works too with a grated potato) Then mix the egg using a simple fork, add some flour. And fry in a frying pan.
Yeah that's right it's not super glamour. I can no more eat dairy but remember the taste and taste would be probably much better adding for example grated cheese !

For natural spinach, like the real one you bought on the market, the gamer changer is sorrel sauce. Here sorrel sauce can be found in supermarket already cooked. It's this sauce but unfortunately i'm not sure the recipe is correct : https://honest-food.net/sorrel-sauce-recipe/
You can use this sauce on fish fillet... or on real spinach ! :D

I know it looks disgusting but it's yummy for real. (The can of chopped spinach itself is beurk.)

Or with rice what is great too, it's lactic acid fermented vegetables. They call it kimchi in Korea but it is done elsewhere too in the world without spice.
