Hello Kitty Racing is a better option than the other two, in terms of review rating and cutesyness factor, but it lacks the unbundled pinkness that was Barbie™. :/

Have you noticed that off-brand Barbies (excluding the cheap knockoffs) tend to be a lot better made?
I mean, I get a lot are conceptual art projects, so they can afford to be, but still.

Barbie doesn't need to change, it already has all the popularity. If a western little girl doesn't know what you are talking about when you mention Barbie, you shall be amazed. Actually Barbie got couple new bodies last year(?), one was even skinnier one and one was a bit blumper one (we could call it normal size).
There are lots of cool customized dolls done by fans. For example came upon many cool ideas for My Little Pony dolls some time ago (no, I don't watch the show or collect anything related, just adoring how some people have skills and time to create something new!). Also there are lots of Warhammer 40k fans with awesome skills to customize. Games workshop even hosted some competitions for the best guys and girls but I can't remember the name of the event... really showed how some people have a great talent in this area.
