could use a little help with text commands if someone knows

hello, i was wondering, does anyone know how to do like those texts to change the size of certain text, and make them like Bold text and striked and so on..
also one other thing that i saw before is people doing those tables that you can do in word, or like excel has by default. any idea how to do those on this site. i would appreciate the help.
