Which email provider do you use?
Well you are totally fine with one of the big well known websites like Gmail or Yahoo.
I highly doubt that they will ever get "hacked" (eg. database dump).
Just make sure to choose a password that no one can bruteforce or guess.
Use the password for this account only.
Other than that keep your computer clean and you're fine.
If you are super paranoid, wipe an old laptop/computer, set it up and only use the machine to log in on this account.

I was banging my head between Gmail and Tutanota. I've had some problems with Gmail in the past (not receiving every mail from abv.bg), that's why I'm asking for the people's opinion.
On a side note, if I get so paranoid, that I start considering the wiped out laptop option, I'll seek medical attention.
I have a bunch of Linux live CDs for that occasion.

I personally dislike gmail's interface and default app on android for it, otherwise it's fine. I also have an outlook account, which I prefer the interface of and is also fine to use. Both are big enough for decent security, but anything can be hacked if it's really wanted. Just make sure you have a secure password.
For my actual email data I use my own domain which is hosted at a provider. I never had any problems there and I can make as many aliases as I want. So for certain sites I would just make an alias and if spam does happen to come in, I know which site has caused it and I can either change the address easily or just remove it all together.

GMail is popular but monitors everything. Every. Thing. If you are used to using folder structure, you can also forget it, it has a more adaptive, but not-so-straightforward system of message tagging and filtering. Recommended if you already have many things at Google, like Drive, lot of Android devices, other assorted accounts.
Yahoo is actually quite great, speaks most languages, has good compatibility with almost all browsers. Considered quite outdated as a service though and they don't offer that much under-the-hood options.
Outlook is my main because of getting used to it, mostly. It offers folder and tagging structures, but only in the browser – tagging doesn't transfer to any email client and folders are a problem too for non-MS email clients (Thunderbird supports it to a degree). I prefer its usability over GMail ever since the upgrade early this year. Recommended if you prefer OneDrive and other MS services or use a Windows Phone.
Tutanota is secure, but compared to the above three, not really user friendly. It's not for everyday use, but if you are paranoid, it's better than Google, MS, or Yahoo.
Of course, if you are really paranoid, you can just use a high-security email service, like HushMail. They aren't really aiming for good everyday user experience though, so don't expect them to be comfortable to use compared to GMail or Outlook.

I used operamail in the past (their pack had a lot of cool features, like fridge, file sharing etc), and after they closed (migrated to fastmail in fact), I started using GMail. I am satisfied with GMail. How about data tracking... I don't deal drugs or traffic prostitutes using my mail address, and it's not like some person reads all my emails; so, why would I be concerned about it?

I advise to open your emails on all those sites you're interested, otherwise your nick, if you use the same for all, would be taken before you did. And it does not cost you anything to keep extra emails.
Then try to use your favorite ones a bit for not so important tasks while to see if their services fit your needs. Make a pro/con list regarding your opinions and "finally" decide to change your main email after you're sure.

Also you should make your username for those emails different from usernames that you use for other sites so it can't be guessed, since you care about security.

From some time I'm thinking on changing my important accounts (bank account, steam, gmg etc.) to a more secure email service. Currently I'm using abv.bg, the most popular service in my country, but I've read good things for Tutanota. Which provider do you use and recommend? Is there logic in a "migration" like this, or am I just paranoid?
