And how do you sell them outside steam? The whole problem is now they are market locked.

for paypal, games, anything. you trade them outside steam like you trade everything else outside steam, basically. steamtrades.com is a good place for that.
but i really would recommend to wait a while. right now cards like from Platformica are worth nothing. but they will get more and more rare. so either you trade them right now for a cheap 10 cent bundle game, or you wait and see if they are actually worth something in a while.

What's wrong with gems? 1000 of them make a sack and it sells for almost 1 €.

cards I curtrently have can be changed into 4 Gems each. if 1000 gems = 1€ then 4 Gems = 0.004€, less than even one cent, so few times less valuable than these cards were evenback when they were marketable ;p

actually unless you have few hundreds of these cards it is practically nothing ;p 1 game = 3 cards, 3 cards = 12 Gems. 12 Gems cannot be sold, you can only sell if you have 1000 or more, so 12 Gems is worth nothing for most people because most people will not be able to accumulate remaining 988 gems needed for sack ;)

I think you should know - They will never be really valuable. Price of 10 cents in 10 years is optimistic. There are just too many of them to make them rare and collectable during our lifetimes.

Maybe they disable the cards after they know they are non-marketable. I sent there some cards when steam started to remove the cards from the market. It seems it was just because I did it before they disabled it.

I've been trying to trade some to complete some sets while helping others to complete their own sets too, but it's hard.

I was approached by a trader as I had quite a bunch of non-marketable cards. He traded card sets to me which I crafted into badges gaining a few levels in the process. As I'm lazy it was the perfect solution for me :)
edit: Converting them into gems is absolutely wasteful if you don't want to craft you could announce in the specific game hub what you have and trade them for some cheap game or selflessly help others to complete a set.

I have around 20 cards from removed games that I can't sell. I don't craft badges or anything. What can I do with them now instead of wasting them by turning them into diamonds?
