I've won the game chivalry. I've waited the week for the gift to come and nothing has. I've sent a friend request on steam but they haven't replied. If they never reply or post the key am I just screwed over for the game?

In the future, you should contact support about any circumstances involving specific giveaways; Not only can staff usually give you a more proper response, but pointing out specifics in the manner that you're doing (that is, linking to the giveaway) goes against site guidelines and runs you a potential risk of suspension.

Use the appropriate avenues for support. If you have an issue with another user, submit a ticket with a user report, rather than calling them out within the community or on the forum.

Additional information from the site guidelines that may be relevant to you:

Allow the giveaway creator one week to send the gift. Please be patient and do not contact them during this time. If the gift is not received after one week, you may contact the giveaway creator on Steam to follow-up.
Winners should correctly mark their gift as received or not received within one week of the giveaway closing. This feedback should be kept up-to-date if the status of the gift changes.

To rephrase those:
Mark your giveaway "Not Received" as soon as the site lets you, if you still haven't gotten your game or have received a game that doesn't match the giveaway listing.
[Unless you've received a key and there's an issue with it] Don't contact users for the first week (it's rude as well as against guidelines) but, if you're so inclined, you may contact them after that duration (it's recommendable to attempt contact through the giveaway's comments before attempting off-site communication). Staff can't do anything about individual unsent giveaways (though they'll take action when abuse is suspected due to intentional or excessive unsent games), so this is going to be your only option if you want to continue your efforts to receive your win.
