Cowboy Bebop, Evangelion, Akira, Mirai Nikki, Eatman, Shaman King, Ga-Rei Zero.

Those are the ones that i can tell you at the top of my head, if i remember more i will add them :)

Watch the Monogatari series. I'd watch it in order of the shows coming out which is Bakamonogatari, Nisemonogatari, Nikomonogatari, monogatari season 2 and Hanamonogatari. It's a weird, but fantastic show. Also try Durarara! and Baccano!. Another good show would be Log Horizon (season 2 coming this October 4th. Psycho-Pass (also season 2 coming on the 4th) which is great. Try Aldnoah Zero, it's got a fantastic soundtrack and the show is great. Kill La Kill is also really good.

Melancholy of Haruhi Suzumiya (Suzumiya Haruhi no Yuuutsu)
Two seasons and a movie which isn't bad.
First anime I watched. And from what I remember, the dub wasn't bad either if you prefer dub over sub.

Jojo's Bizarre Adventure has been mentioned a few times. I'll just repeat it, as long as you go for the 2012+ series. (Now running the Startdust Crusaders arc, which most people consider the turning point of the series)
Knights of Sidonia is worth watching if you're into Mecha.
Guyver is good in both it's series incarnations.
And for more classic mecha, try Macross, original Voltron or GaoGaiGar (or any other of the Brave series. They're basically what you get if you take Transfomers and push that into Giant Robot territory)
