Just requested a refund on Ultima that I purchased when they announced the removal, even if the giveaway wasn't on the table then there's no way they didn't know the games were coming back.

Is it legit to ask for a refund during this giveaway?

One of the refund options is "on sale/cheaper" -- so I did a request with that reason. I figure if they want to give me a refund, I'll take it.

I'm technically outside of the refund period but there's no harm in trying it. I don't need the refund but I also don't agree with the practice of announcing removals to drive sales and then reverting that removal due to the "unexpected" surge of interest. |Had they just re-released it I would have let it lie but bringing it back for free is beyond taking the piss. Even if GOG didn't instigate the giveaway they shouldn't have let it happen and the fact they did makes them just as complicit.

Very good said. I did the same with all three games. Still waiting for their decision.

I've gotten TWO automated emails so far -- both times apologizing for the long wait, while also stating that if I had more information, I should reply.
It's worth noting that, as of two days ago, the "REFUND" links were still visible in the order (even though I already requested one). As of today, the refund links are gone.

They combined the 3 requests into one a day or so ago, but no update.

"you'll get a code that is valid until 1-Jan-2200." I read that as 1-Jan-2020 at first and thought wait how is that helpful??

Claim from here.
They were de-listed from GOG at the end of June and are now being re-released.
They will be free until the 3rd of September.
Even if you already own them, you can gift them to yourself on checkout and you'll get a code that is valid until 1-Jan-2200.
Now also free on Origin with the same deadline (may be unavailable in some countries):
Syndicate (but only the base game, not the Plus version with the expansion) (Syndicate Wars is only listed on GOG and not on any other store, including Origin)
Ultima Underworld I
Ultima Underworld II
An alternative Origin link that includes all three games (it wasn't working at the beginning):
August Classics
