just wondering what all the extra DLC's on Grand Master collection are, and if they add anything to gameplay

Yeah it seems like it's mostly armor and weapons.

But do any veterans of DW2 know if these are essential to the gameplay? Like, is it worth getting it? or are they like Hitman Absolution's DLCs.

No veteran, but I have like 50 hours on record in DoW2. Most of the DLC are skin packs for multiplayer games. There is one DLC adding a playable hero to the Last Stand mode. And that's pretty much it...
