You can give your own email address. You'll get a code sent to that email address - the code isn't actually bound to your email, so you can give it away whenever you want.

Hello,
my friend has birthday in April and I would like to buy them a gift. GOG has a sale right now and I wanted to buy them Undertale. However, I would like to give them the gift on their birthday. In the checkout process it wants me to provide the recipient's email. Is there any way I can hold off with the gift for now; i.e. purchase it now and use it (send it to someone) later?
Thanks in advance.
