TL;DR version:
Coupons tie to your account, and not to keys, despite how Humble presents it. This coupon is already expired. This is a great giveaway regardless. <3
Long version:
Standard format is that the coupon is tied to the bundle purchase itself, rather than to the keys that are labeled as having the coupons. Such coupons would go straight to your own coupons tab either immediately when purchasing a bundle with a coupon associated to any part of it, or after selecting and activating the coupons in the "extras" section of the bundle.
This seems to be the case for the activation in question, as well.
Which is to say, coupons from Humble are seemingly always non-transferrable (barring when one purchases the entire bundle as a gift) and seemingly always link to the purchaser's account immediately following the purchase of a bundle.
Humble just lazily phrases the claim text on gifts without consideration for the fact that they've been selected as gifts, or the fact that the coupons aren't typically associated with the claiming of individual keys to begin with (while it's possible for them to be associated if the coupon codes activate to Steam, I don't recall that such coupons have been seen for a really good while now; This may be indicative of Humble blocking publishers from doing such so they can instead promote coupons for their own storefront).
( In other words, Humble associates the coupon to the key activation only so that the front page header for the game shows the coupon mention, so that potential purchasers will easily see it when considering the game prior to purchasing the bundle, and not because the coupon is actually associated with the key. Given how remarkably easy it is to create an associative header that only displays on the selection/purchase screen, we can thereby conclude that Humble is just being lazy. )
Well, coupons also typically expire within one month or two, and the SG thread for the Choice bundle in question does state an expiration of 2022-09-01, so ultimately it's a moot consideration for this particular activation. :S
