Curry, all-the-time, always curry. Cut up a few vegetables, add some cut meat, brown it in a pot and add water and simmer for an hour. The only "hard" part is making the curry roux (which you can really only screw up if you burn it). Curry is essentially making stew and adding curry roux, and it's SO DELICIOUS.
