You could always take a page from the witness and the many imitators (though many of which do a less good job). Nobody would accuse it of being super simple (though from a UI perspective it is).

The key point is that everything is taught by example, with no explicit tutorial mode, just discovery of mechanisms because you have little or no choice but to use them when first encountered.

Depending on UI complexity it may be a poor model for your kind of game.
