Hey, when trying to redeem it says they are out of keys for the product. We may need to delete the GA?

Hey! No need to delete the GA.
Humble usually says the keys are temporarily exhausted, which means they’re out of stock at the moment, but they’ll restock soon. Once they do, you should get an email notification from Humble when your key becomes available.

i will keep an eye out but at 7 days i must request a deletion or be flagged as not activating a win

Sure, that's fine.
But if you do request a deletion later, I’ll need you to send me the key claim link from the email you received from Humble.
Without that link, even if Humble restocks the keys, I won’t be able to access it since the claim page is tied to your email.
