A Canticle for Leibowitz by Walter Miller is an incredible SciFi novel. Essentially it follows a group of monks trying to preserve scientific knowledge after a nuclear apocalypse, where the survivors have blamed science for all the carnage. It does a fascinating deep dive into the quirks of monastic life and has some batshit worldbuiiding.

Ender's Game by Orson Scott Card, a great read even if you've seen the movie since it skips an entinre plotline and most of character development.
