Gifting to friends and sending it via email both will show the receiver your Steam email. It's more secure to email it to yourself and then send them the steampowered.com/gift/ack/ABC123?redeemer=mongkethegifter@email.com link with the end removed. It's up to you, but just letting you know since many people who trade/gift often still are unaware of how poor Steam handles these simple things.
